1 block of feta (about 200g)
500g cherry tomatoes
300g fresh spinach
2 garlic cloves
2 tsp chili powder (or 1 tsp if your face turns read when reading the word chili)
Salt & pepper
Olive oil
300g pasta (penne, fusilli—whatever’s in the cupboard)
Dried oregano or fresh basil
Want to add extra protein? This dish works beautifully with chicken. Simply season two chicken breasts with a bit of olive oil, salt, pepper, and oregano. Pan-fry until golden and fully cooked (about 6–7 minutes per side), then slice or shred.
Once your pasta and feta sauce are ready, stir the chicken through at the end.
