Baked Feta pasta with spinach

Quick and easy but full of flavor. Perfect comfort food

No time and no energy? But still craving something warm and satisfying? This is the kind of recipe that takes almost no effort, but delivers big on flavor. Packed with veggies, full of creamy goodness, and ready in a little over 30 minutes. Perfect for busy weekdays when you want to eat well without overthinking it.

Ingredients

Here’s what goes into 4 servings:

  • 1 block of feta (about 200g)

  • 500g cherry tomatoes

  • 300g fresh spinach

  • 2 garlic cloves

  • 2 tsp chili powder (or 1 tsp if your face turns read when reading the word chili)

  • Salt & pepper

  • Olive oil

  • 300g pasta (penne, fusilli—whatever’s in the cupboard)

  • Dried oregano or fresh basil

Instructions

  1. Preheat your oven to 200°C

  2. Grab a big baking dish, drizzle the base with olive oil, and place the feta right in the middle (no need to overthink the placement).

  3. Wash the cherry tomatoes and toss them around the feta.

  4. Add the fresh spinach straight on top. It’ll shrink down beautifully in the oven.

  5. Grate or crush the garlic and spread it evenly.

  6. Season with salt, pepper, chili powder, and a sprinkle of oregano. Finish with a bit more olive oil.

  7. Pop the whole thing into the oven for 32 minutes.

  8. Around the 20-minute mark, cook your pasta so it’s ready just in time.

  9. Drain the pasta. Meanwhile, mash the roasted feta and tomatoes with the back of a wooden spoon into a rough sauce. you can do this right in the oven dish—nice and rustic.

  10. Stir in the spinach until everything’s combined and creamy. Add some fresh basil if you’ve got it.

  11. Either mix the pasta in or plate it up and pour the sauce on top. Up to you.

Extra protein option:

Want to add extra protein? This dish works beautifully with chicken. Simply season two chicken breasts with a bit of olive oil, salt, pepper, and oregano. Pan-fry until golden and fully cooked (about 6–7 minutes per side), then slice or shred.

Once your pasta and feta sauce are ready, stir the chicken through at the end.

It makes the dish heartier and perfect for post-training recovery—or just a satisfying, protein-rich dinner.
