High protein chicken Alfredo pasta

Autumn calls for comfort food. This creamy Alfredo gives you exactly that, with plenty of protein too.

A warm bowl of pasta is hard to beat when the days get colder. This version combines a creamy, protein-rich sauce with pasta and chicken for an easy and filling meal. The secret? Cottage cheese and eggs form the base of the sauce.

Together with Parmesan and milk, the sauce alone contains around 60 grams of protein.

Ingredients

For the Alfredo sauce:

  • 225 g low-fat cottage cheese
  • 2 large hard-boiled eggs
  • 30 g Parmesan
  • 180 ml milk
  • ½ tsp cornflour
  • 1 tsp garlic powder
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

To make it a meal

  • Your favourite pasta
  • Chicken breast

Want even more protein? You can use edamame-, lentil or chickpea pasta. But regular pasta works perfectly well too if you want to add some more carbs.

Instructions

  1. Add the cottage cheese, hard-boiled eggs, Parmesan, milk, cornflour and seasonings to a blender.
  2. Blend until completely smooth and creamy.
  3. Pour the sauce into a saucepan and warm over medium-low heat for around 3–5 minutes, stirring frequently. Let it warm through and thicken slightly, but don’t let it boil.
  4. Cook your pasta and chicken separately, then toss everything together. If the sauce is a little too thick, add a splash of pasta water until you reach the consistency you like. That’s it!

The entire Alfredo sauce contains approximately:

560 kcal | 60 g protein | 20 g carbohydrates | 27 g fat

That’s before adding your pasta and chicken, so the nutritional values of the complete meal will depend on the portions and ingredients you choose.

Easy to prepare, easy to make ahead and exactly the kind of comfort food we want in autumn.

Enjoy! 🍝
