Eating a good lunch doesn’t mean you need to spend half your break cooking. That’s why we’re starting a new series of easy, healthy lunches that require absolutely no cooking. Just assemble, mix and eat.
First up: a lentil, beetroot and edamame bowl with rocket, feta and a simple honey-soy dressing.
What makes this bowl so useful on a busy workday is that it requires almost no preparation, while still bringing together the different parts of a filling lunch. You get protein from the lentils, edamame and feta, carbohydrates from the lentils and beetroot, fats from the feta and olive oil, and plenty of fibre from the vegetables and legumes.
No stove. No complicated meal prep. And everything can easily be picked up on your way to work or kept ready in the fridge. Save this one for your next busy workday.

For the dressing
This might be our shortest instructions for a recipe ever.
Add the lentils, beetroot, edamame and rocket to a bowl. Crumble the feta on top.
Mix the olive oil, honey, soy sauce and a squeeze of lemon juice to make the dressing. Pour it over the bowl, mix everything together and enjoy. That’s it!
Tip: If you’re using canned lentils, rinse them before adding them to the bowl. And go easy on the additional salt: feta and soy sauce already bring plenty of flavour.
