A festive dessert that keeps things light. Around the holidays, dessert is often rich, heavy, and followed by a food coma. But it doesn’t have to be. This lighter twist on tiramisu brings you all the creamy, cozy satisfaction of the original. With a few smarter swaps.
We’ve replaced the heavy mascarpone with Vanilla quark and the result is a dessert that feels festive and satisfying, without the heaviness. This version isn’t just about cutting calories. It’s about keeping the joy of a real dessert alive while staying aligned with your goals. Best of all? It takes just minutes to make and actually gets better after a night in the fridge. Whether you’re entertaining or treating yourself after a long week, it’s a winner for the whole family.
1. Make your quark layer: Spoon the vanilla quark into a mixing bowl. If using plain quark, add a splash of vanilla extract. Taste the mixture. If you want a touch more sweetness, add 1–2 tablespoons of honey or maple syrup. Stir until smooth.
2. Prepare your espresso: Brew the espresso in advance so it has time to cool. Once cool, pour it into a shallow bowl. No espresso machine? No problem. You can also dissolve 2–3 teaspoons of instant coffee in 200 ml of hot water. Once cooled, pour it into a shallow bowl.
3. Start layering: Use a medium glass dish or tray. Spread a thin layer of quark on the bottom. One by one, dip each ladyfinger briefly into the espresso (no more than 1–2 seconds) and place them side-by-side over the quark layer.
4. Build the second layer: Once you’ve added a full layer of soaked ladyfingers, top with another layer of quark. Repeat: another layer of soaked ladyfingers, followed by the remaining quark.
5. Let it set: Cover and refrigerate for at least 4 hours, or overnight. This helps the layers firm up and the flavours blend beautifully.
6. Finish before serving: Right before serving, dust the top with cocoa powder using a fine sieve. If you want to dress it up, add chocolate shavings or a few fresh berries.
It’s lighter than classic tiramisu, but at the same time high in protein, low in fuss. It preps in minutes and looks impressive. Great for groups and easy to scale up or down.
